This smashed chick pea and black olive tapenade is just what the doctor ordered when trying to eat well after a food marathon at work the other day! To make this deliciousness, you will need:
Chick Pea Olive Smash on Grilled Pita
- 1 Can Chick Peas (also called Garbanzo Beans)
- 1 Small Jar Chopped Black Olives
- 1/2 Small Diced Red Onion
- 2 Tablespoon Lemon Juice
- 1 Teaspoon Lime Juice
- Several Sprigs of Cilantro
- 1/4 Teaspoon Salt
- Whole Wheat Pita Bread
Take a potato masher (or a fork) and smash the chick peas.
Then mix in your chopped olives, red onion, cilantro, citrus juice, and salt.
Brush pita bread with olive oil and sear for one minute on each side on a hot skillet.
Pile the Tapernade on high! Enjoy!
