Honey Dijon Rosemary Chicken Recipe, with Apple Cider Vinegar and Garlic

I love cooking with chicken. It's a versatile protein that can be cooked and prepared in a seemingly infinite variety of ways. Today, I made a flavorful Honey Dijon Rosemary Chicken dish for dinner. I love cooking with a variety of sauces and marinates, and I like to prepare these sauces fresh at home. 

Since moving into our new home, I have been keeping every herb that I can think of on hand. Basil, oregano, rosemary, dill, thyme, chive, sage - you name it, I most likely have it. I created a rolling herb garden to hold all of my house plants and herbs. They smell delightful, and watering them is the perfect task for my toddler son to help with every few days. 

You will need the following to re-create this Honey Dijon Rosemary Chicken recipe:

Honey Dijon Rosemary Chicken Recipe

Ingredients:

  • 4 Large Chicken Breasts
  • 1/2 Cup Apple Cider Vinegar
  • 1/4 Cup Olive Oil
  • 3 Tablespoons Dijon Mustard
  • 2 Tablespoons Miniced Garlic
  • 2 Tablespoons Honey
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 2 Sprigs Fresh Rosemary

Instructions:

  • 1) Trim chicken, and butterfly chicken breasts if needed. This will help to speed up the cooking since it can take much longer for thicker chicken breasts to cook.
  • 2) Salt and pepper your chicken, reserving some of your salt and pepper for the Honey Dijon marinade.
  • 3) Blend all of your marinade ingredients together in a small blender (everything listed above excpet for the chicken). Reserve a few Rosemary stems for visual garnish.
  • 4) Oil your pan, and sear chicken for sevearl minutes on one side. Turn chicken and turn your heat down to medium.
  • 5) After your chicken has been turned, pour your honey dijon marinde over you chicken.
  • 6) Once chicken reaches an internal temperature of 165F (use a kitchen thermometer), you are good to go! Remove from heat and allow to rest for several more minutes, and then serve.
